Easy Cheesy Beef and Potato Casserole

A rustic, hearty casserole loaded with seasoned ground beef, tender cubed potatoes, pinto beans, and an epic layer of melted cheddar cheese.

Ingredients
  

  • 1 lb ground beef (85/15 blend)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 large russet potatoes, peeled and cubed into bite-sized pieces
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 2 cups sharp cheddar cheese, shredded
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a 9 × 13-inch baking dish or a deep aluminum baking pan.
  2. Brown the Beef: In a large skillet over medium-high heat, brown the ground beef with the diced onion and garlic until the meat is fully cooked. Drain excess grease.
  3. Season & Mix: Stir in the chili powder, cumin, salt, pepper, diced tomatoes, and pinto beans. Let it simmer for 3 minutes.
  4. Combine: Add the cubed potatoes into the beef mixture and toss until evenly coated.
  5. Bake: Transfer the mix into your prepared baking dish. Cover with aluminum foil and bake for 35 minutes, or until the potatoes are fork-tender.
  6. Cheese Layer: Remove the foil, smother the top evenly with shredded cheddar cheese, and bake uncovered for another 10 minutes until the cheese is melted, bubbly, and slightly golden.
  7. Serve: Garnish with fresh parsley, let it cool for 5 minutes, and serve hot!
