- Preheat oven to 425°F (220°C). Lightly grease a large 18x13 inch baking sheet.
- Toss halved baby potatoes with 1 tablespoon olive oil, half the salt, and black pepper. Spread on the sheet pan and roast for 15 minutes.
- Pat chicken breasts dry using paper towels.
- In a shallow dish, stir together Parmesan, panko, garlic powder, Italian seasoning, paprika, remaining salt, and pepper.
- Brush chicken breasts with 1 tablespoon olive oil, then press both sides into the panko mixture until evenly coated.
- Remove sheet pan from the oven. Push potatoes to one side and place breaded chicken in the center.
- Toss trimmed green beans with remaining olive oil, melted butter, and minced garlic. Arrange next to the chicken.
- Bake for 20 to 25 minutes until chicken reaches 165°F (74°C) internally and potatoes are tender.
- Broil for 2 to 3 minutes to crisp the topping.
- Garnish with chopped parsley and serve warm with fresh lemon wedges.
Notes
Dry the meat thoroughly: Removing surface moisture allows the oil and crumb coating to adhere properly.
Avoid crowding: Space out your green beans and potatoes so they roast rather than steam on the tray.
Toaster oven reheating: Warm leftovers at 350°F in a toaster oven to revive the crispy crust without drying the meat.
