Method
- Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil, place a wire baking rack on top, and spray the rack lightly with cooking spray.
- In a shallow bowl, whisk together the eggs, whole milk, half of the garlic salt, and a pinch of black pepper.
- In a separate wide dish, combine the Panko breadcrumbs, grated Parmesan cheese, lemon pepper, remaining garlic salt, onion powder, and Italian seasoning.
- Pat the veal chops completely dry with paper towels.
- Dip each chop into the egg mixture, coating both sides. Let any excess liquid drip back into the bowl.
- Immediately press the chop firmly into the Parmesan-Panko mixture. Ensure all sides, including the edges, are thoroughly coated.
- Place the coated chops onto the prepared wire rack. Drizzle the melted butter evenly over the top of each chop.
- Bake for 25 to 30 minutes, or until the crust is a deep golden-brown and the internal temperature of the veal reaches 145°F (63°C).
- Remove from the oven and let the chops rest on the rack for 5 minutes before serving to lock in the juices.
Notes
For the absolute best results, grate your own Parmesan cheese from a block. Pre-packaged shredded cheese contains anti-caking agents that prevent it from melting and crisping up.
If veal is unavailable, you can substitute thick, bone-in chicken breasts or thick-cut halal turkey chops using the exact same steps.
