Classic Beef and Macaroni Soup

A thick, hearty, and deeply comforting soup loaded with seasoned ground beef, tender elbow macaroni, and mixed vegetables in a rich tomato-beef broth.

Ingredients
  

  • 1 lb Ground beef
  • 1/2 cup Onion, diced
  • 6 cups Beef broth
  • 14 oz. Can diced tomatoes
  • 2 tbps Tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Oregano
  • 1/2 tsp Dried basil
  • 1/2 cups Elbow macaroni, uncooked
  • 1 ½ cups Frozen mixed vegetables
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Brown the Meat: Place the ground beef and diced onions in a large pot over medium-high heat. Cook until the meat is fully browned and the onions have softened. Drain any excess grease from the pot.
  2. Build the Broth: Pour in the beef broth, diced tomatoes, tomato paste, Worcestershire sauce, dried basil, oregano, and salt and pepper to taste. Stir well to dissolve the tomato paste and bring the mixture to a boil.
  3. Add Pasta & Veggies: Stir in the uncooked elbow macaroni and the frozen mixed vegetables.
  4. Simmer: Reduce the heat to medium-low, cover the pot with a lid, and let it simmer for about 10 to 12 minutes, or until the noodles are tender to your liking.
  5. Garnish & Serve: Remove from heat, ladle into warm bowls, and serve garnished with freshly chopped parsley.
