Red Chicken Enchiladas

Making Creamy Chicken Enchiladas At Home

Creamy chicken enchiladas bring families to the dinner table without any fuss. You will notice how quickly the pan empties when you serve this meal. Truly, the combination of rich cream cheese and savory red sauce creates a comforting dish. Let me show you how to build this dinner using simple grocery store ingredients.

Mixing the shredded rotisserie chicken with softened cream cheese and salsa creates a dense, flavorful base.

Choosing Your Ingredients Wisely

Rotisserie chicken saves a tremendous amount of time on busy weekday afternoons. Simply shred the meat while it remains warm. Therefore, the chicken absorbs the seasonings much more effectively. Consequently, every bite delivers excellent flavor.

Cream cheese serves as the secret ingredient for the filling. Soften the block fully before mixing to prevent awkward lumps. Moreover, mixing it with sour cream adds a pleasant tanginess. This prevents the filling from feeling too heavy.

Assembling Your Creamy Chicken Enchiladas

Rolling the tortillas tightly keeps the creamy filling contained while they bake.

Flour tortillas roll easily when you warm them slightly. Microwaving them under a damp paper towel works incredibly well. Subsequently, spoon a generous portion of the chicken mixture down the center. Roll them tightly to keep everything contained during baking.

Lay the rolled tortillas seam side down in your glass baking dish. Pouring red enchilada sauce over the top seals in the moisture. Afterwards, sprinkle a thick layer of shredded cheddar and Monterey Jack cheese over everything. Naturally, freshly grated cheese melts much smoother than the prepackaged varieties.

Baking and Resting Your Dish

Covering the dish with aluminum foil prevents the cheese from burning early on. Bake the casserole until the edges bubble vigorously. Then, remove the foil for the final few minutes. This step develops a gorgeous golden crust on the melted cheese.

Resting the casserole is a mandatory step before serving. Waiting five minutes allows the piping hot sauce to thicken properly. Consequently, you get a beautiful cheese stretch when lifting the first portion. If you serve it immediately, the filling will slide out entirely.

Storing Your Leftover Dinner

Leftovers taste even richer the following day. Store any remaining portions in an airtight container in the refrigerator. Fortunately, they reheat beautifully in the microwave or oven. Adding a splash of extra sauce prevents the tortillas from drying out.

Preparing Meals Ahead Of Time

Preparing this meal in advance helps tremendously during chaotic weekdays. Assemble the entire casserole the night before you plan to eat. Simply wrap the unbaked dish tightly in plastic wrap before refrigerating. Remember to add ten minutes to the total baking time when cooking straight from the fridge.

Customizing Your Comfort Food

Adding vegetables into the filling stretches your grocery budget further. Diced bell peppers or corn kernels provide excellent texture. Furthermore, a handful of black beans increases the protein content substantially. Adjust the spices depending on your personal heat tolerance.

Serving this dish alongside simple sides completes the meal. A crisp green salad cuts through the richness beautifully. Alternatively, Spanish rice soaks up any extra red sauce left on the plate. Everyone always asks for a second helping.

Letting the dish rest for a few minutes ensures the sauce thickens and the cheese stretches perfectly when serving.

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Servings: 6 servings

Ingredients

For the Filling:
  • 4 cups shredded rotisserie chicken
  • 1 8 ounce block cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup chunky mild salsa
  • 1 tsp garlic powder
  • Salt and black pepper to taste
For Assembly:
  • 8 8 inch flour tortillas
  • 1 10 ounce can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: roughly chopped fresh cilantro

Method

  1. Preheat your oven to 350 degrees Fahrenheit. Spray a glass nine by thirteen inch baking dish with nonstick cooking spray.
  2. Place the cream cheese in a microwave safe bowl and heat in short 15 second bursts until completely soft and pliable.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, and chunky salsa until uniform. Fold in the shredded chicken and garlic powder. Taste the mixture and add salt and pepper as needed.
  4. Pour roughly one quarter cup of the red enchilada sauce into the bottom of the prepared baking dish and spread it around.
  5. Warm the flour tortillas slightly in the microwave so they become flexible. Place a generous half cup of the chicken filling in the center of each tortilla.
  6. Roll the tortillas tightly and arrange them seam side down in the baking dish.
  7. Pour the remaining red enchilada sauce evenly over the rolled tortillas. Sprinkle the mixed cheddar and Monterey Jack cheeses thickly over the top.
  8. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbling and just starting to turn golden brown.
  10. Remove from the oven and let the dish rest undisturbed for exactly 5 minutes. This allows the sauce to thicken so the filling stays inside when serving. Garnish with chopped cilantro before lifting out portions.

Notes

Always grate your cheese from a block rather than buying it in a bag. Bagged cheese has an anti caking powder that prevents that beautiful, stretchy melt.
If your chicken is cold straight from the fridge, microwave the shredded meat for thirty seconds before mixing. It blends with the cream cheese much easier when warm.
Letting the casserole rest for five minutes is not optional. If you cut into boiling hot enchiladas, the sauce will run everywhere and leave you with empty tortillas.
