Ham Egg Muffins

Ham Egg Muffins for Mornings That Start Too Fast

Ham egg muffins have saved more rushed mornings in my kitchen than I can count. When everyone is looking for shoes and the coffee is still brewing, having a tray of these ready in the fridge means breakfast is already handled. They are portable, filling, and come together with only a few ingredients I almost always have on hand.

Ready for the oven after a quick mix

I started making them years ago when the kids were small and needed something they could eat in the car. The combination of diced ham, eggs, cheddar, and a bit of baking mix bakes into a sturdy muffin that holds its shape yet stays tender inside. No fancy tools required, just a muffin tin and a bowl.

Why These Ham Egg Muffins Work on Real Schedules

Everything in one bowl, ready to stir.

The batter mixes in under five minutes once the ham is diced. Because the ham is already cooked, there is no extra skillet step. You simply stir everything together, divide it among the cups, and let the oven do the rest. Twenty minutes later you have a dozen muffins that reheat in less than a minute.

I keep a batch in the fridge for the week and freeze the rest. They thaw overnight and warm up without turning rubbery if you wrap them loosely. The cheese melts again and the edges stay just a little crisp. That texture is what makes them feel like a real breakfast instead of something grabbed from a box.

Simple Swaps That Still Taste Like Home

Sharp cheddar is my usual choice because it melts cleanly and adds a bit of bite. Monterey Jack or a mild Mexican blend works just as well if that is what is open in the fridge. You can stir in a handful of finely chopped spinach or green onion if you want a little color, but the basic version is solid on its own.

The baking mix keeps the muffins from becoming dense. I have tried leaving it out and the result is more like a crustless quiche that falls apart when you try to carry it. One cup is enough to give structure without making them heavy.

How I Store and Reheat Without Losing Texture

Once the muffins cool for five minutes in the tin I run a thin knife around the edges and lift them out. They go into a container with a paper towel underneath to catch any moisture. In the fridge they stay good for five days. For the freezer I wrap each one in foil and keep them up to three months.

Reheating is straightforward. From the fridge, forty five to sixty seconds in the microwave brings them back. From frozen, I thaw them in the fridge overnight and then warm them the same way. They never need more than a minute and a half. That is the whole point. Breakfast should not add another chore to an already full morning.

Ham Egg Muffins

These ham egg muffins are the ones I bake on Sunday so weekday mornings stay calm. They reheat cleanly and hold together when you need to eat on the go.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings: 12 muffins

Ingredients

  • 1 lb diced cooked ham
  • 4 large eggs, lightly beaten
  • 1 cup shredded sharp cheddar cheese
  • 1 cup baking mix (such as Bisquick

Method

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin well.
  2. In a large bowl combine the diced ham, beaten eggs, shredded cheddar, and baking mix. Stir until everything is evenly mixed.
  3. Divide the batter evenly among the greased muffin cups, filling each about three-quarters full.
  4. Bake for 20 minutes until the tops are puffed and lightly golden.
  5. Let the muffins cool in the tin for 5 minutes, then run a knife around the edges and remove. Serve warm or store for later.

Notes

Grease the tin thoroughly; the cheese can stick if the cups are dry.
Dice the ham small so every bite has some without large chunks pulling the muffin apart.
If the batter seems thick, that is normal. It rises nicely in the oven.
Wrap cooled muffins individually before freezing so you can grab only what you need.
