Ingredients
  

  • 4 thick, bone-in veal chops (about 1-inch thick)
  • 2 large eggs
  • 3 tbsp whole milk
  • 1 cup Panko breadcrumbs
  • 2 cups freshly grated Parmesan cheese
  • 1 tbsp garlic salt
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp lemon pepper
  • 1/2 tsp Italian seasoning
  • 3 tbsp unsalted butter, melted
  • Cooking spray (for the rack)

Method
 

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil, place a wire baking rack on top, and spray the rack lightly with cooking spray.
  2. In a shallow bowl, whisk together the eggs, whole milk, half of the garlic salt, and a pinch of black pepper.
  3. In a separate wide dish, combine the Panko breadcrumbs, grated Parmesan cheese, lemon pepper, remaining garlic salt, onion powder, and Italian seasoning.
  4. Pat the veal chops completely dry with paper towels.
  5. Dip each chop into the egg mixture, coating both sides. Let any excess liquid drip back into the bowl.
  6. Immediately press the chop firmly into the Parmesan-Panko mixture. Ensure all sides, including the edges, are thoroughly coated.
  7. Place the coated chops onto the prepared wire rack. Drizzle the melted butter evenly over the top of each chop.
  8. Bake for 25 to 30 minutes, or until the crust is a deep golden-brown and the internal temperature of the veal reaches 145°F (63°C).
  9. Remove from the oven and let the chops rest on the rack for 5 minutes before serving to lock in the juices.

Notes

For the absolute best results, grate your own Parmesan cheese from a block. Pre-packaged shredded cheese contains anti-caking agents that prevent it from melting and crisping up.
If veal is unavailable, you can substitute thick, bone-in chicken breasts or thick-cut halal turkey chops using the exact same steps.
