Stuffed Cabbage Rolls

Easy Oven-Baked Stuffed Cabbage Rolls with Tomato Sauce

If you’re craving something hearty, comforting, and genuinely satisfying, these oven-baked stuffed cabbage rolls hit the spot every single time. I made a batch last weekend and the whole kitchen smelled incredible while they baked. The cabbage turns tender, the filling stays juicy, and the tomato sauce thickens into something you’ll want to spoon over everything.

This version is straightforward — no fancy techniques, just good ingredients and a little patience while they bake. It’s the kind of meal that works great for Sunday dinner, meal prep, or when you want leftovers that actually taste better the next day.

Rolling the cabbage leaves takes a few minutes to get the hang of, but once you do it goes pretty quickly. I like to set up an assembly line: blanched leaves on one side, filling bowl in the middle, and the baking dish ready to go.

Why This Baked Version Works So Well

Baking the rolls in the oven instead of simmering on the stovetop gives you more even cooking and lets the sauce reduce and caramelize a little on top. You get those nice browned edges on the cabbage without having to babysit a pot. The foil cover for the first hour keeps everything moist, then uncovering for the last part thickens the sauce and adds color.

These are also very forgiving. If a leaf tears while you’re rolling, just patch it with a piece of another leaf. Nobody will notice once they’re covered in sauce.

What You’ll Need

You probably have most of the ingredients already. One large head of green cabbage, ground beef (or a beef-pork mix if you like), cooked rice, onion, garlic, egg, and basic pantry spices. The sauce is made from canned tomatoes and tomato paste — nothing complicated.

I usually make a double batch because they freeze so well. You can assemble everything, freeze the uncooked rolls in the sauce, and bake straight from frozen when you need them (just add a little extra bake time).

Tips for the Best Stuffed Cabbage Rolls

Blanch the cabbage just until the leaves are pliable — about 8 to 10 minutes in salted boiling water. Don’t overcook them or they’ll fall apart when you roll. Let them cool enough to handle but not cold.

Don’t pack the filling too tight. A loose but even roll keeps its shape better and the rice has room to expand a bit while baking.

Taste your sauce before pouring it over. It should be well-seasoned because the cabbage and rice will absorb some of the flavor. A pinch of sugar helps balance the acidity of the tomatoes.

Let the finished rolls rest for 5–10 minutes before serving. They hold together better and you won’t burn your mouth on the hot filling.

Serve them with mashed potatoes, crusty bread for sopping up the sauce, or a simple green salad to cut the richness. They’re also excellent with a dollop of sour cream on the side if that’s your thing.

These stuffed cabbage rolls are one of those recipes that feel like a warm hug. They’re not fancy, but they’re the kind of food people ask for again and again. Once you make them a couple times you’ll have your own rhythm with the rolling, and it becomes almost meditative.

Give them a try this week — I think you’re going to love how good your kitchen smells while they bake.
